You have a big knife. It's fine for onions and cabbage. Then you try to core a tomato with it, or take the eye out of a potato, or peel a slice of ginger without losing half the ginger โ and suddenly you're fighting the tool. Most of us end up doing that work with a blunt table knife or, honestly, a thumbnail. A paring knife is the small, specific answer to all of it.
A paring knife is a short-bladed knife โ usually 7 to 10 cm โ used for detail work that a large knife is too clumsy for: peeling, coring, trimming, deveining and decorative cutting. The Stahl Talon Paring Knife has a 3.5 inch / 9 cm blade with a fine point, which puts it squarely in the standard paring range.
The length is the whole point. Nine centimetres is short enough that you can hold the blade in your palm and work a fruit against your thumb โ the way you'd peel a mango standing over the sink โ but long enough to run through a small potato in one pass. Longer than that and you lose tip control; shorter and it stops being useful for anything but garnish work.
In practice it earns its place doing the jobs you currently do badly with something else. Coring tomatoes before a bhurji. Scraping the skin off ginger, which a peeler wastes. There's a trade-off and it's worth being straight about it: wood needs a little care that plastic doesn't. Don't leave the knife soaking, don't leave it lying wet by the sink, and rub a few drops of food-safe mineral oil into the handle once a month or whenever the wood looks dry and pale. That's the entire maintenance routine. Do it and the handle outlives most of the drawer; skip it for a year and the wood can dry and crack.

Two habits protect the edge more than sharpening ever will. First, cut on wood or plastic only โ glass, stone and steel counters blunt a blade astonishingly fast. Second, keep it off bones and frozen food. A 9 cm precision blade can chip on a chicken bone or a rock-hard frozen paratha. Those jobs belong to a heavier knife or a cleaver.
