You know the moment. The onions in the middle of the pan have gone dark brown while the ones at the edge are still raw and white, and you are stirring frantically to even it out. That is a thin base with nowhere for the heat to travel. The Meyer Select 30cm Kadai puts a 5mm aluminium core under the entire cooking floor, so heat moves sideways as well as up โ and your bhuna, your biryani base and your kheer all cook at the same rate from centre to rim.
It is also the kadai you can hand down. No non-stick coating to wear off in two years, no nickel to worry about, and a 10-year warranty behind it.
It means the steel alloy contains no nickel, so there is no nickel available to migrate into food โ which matters most when you cook acidic things like tomato gravies, tamarind rasam, lemon rice or curd-based kadhi in the pan for long stretches. Ordinary kitchen stainless steel is usually 18/8 or 18/10, where the second number is the nickel percentage. Nickel is what gives common steel its shine and corrosion resistance, but it is also one of the most frequent contact-allergy triggers in the world, and acidic cooking is exactly the condition under which trace metal migration is highest.
Meyer's Select range uses a proprietary nickel-free alloy instead, and pairs it with superior pitting resistance compared with ordinary stainless steel cookware โ pitting being those tiny permanent white craters that appear when salt sits undissolved on a hot steel surface. If you have ever tipped salt into water before it boiled and later found the base speckled, you have seen pitting. This steel resists it substantially better.

The base is a thick aluminium disc bonded between stainless steel layers, 5mm thick in total, covering the full floor of the kadai โ aluminium conducts heat roughly fifteen times better than steel, so it pulls the flame's heat sideways across the whole base instead of letting it pool over the burner ring. That is the entire reason hot spots disappear.
In practice, three things change. Your tadka stops burning on one side while the other side is still cold. Your kheer and payasam stop catching at the centre, because the milk sees an even surface rather than one scorching point. And when you brown onions for a biryani or bhuna gosht, the whole batch turns the same colour at the same time, so you are not picking out burnt bits at the end.
The 5mm mass also holds heat. Drop a batch of cold pakoras or frozen samosas into hot oil in a thin kadai and the temperature crashes, giving you oily food. Here the base carries enough stored heat to keep the oil closer to frying temperature, so the crust sets faster and absorbs less oil.

A 30cm / 4L kadai is a large-family and entertaining size โ comfortable for cooking for six to ten people, deep-frying a full batch of snacks, or making a one-pot biryani or pulao. For a couple or a family of three cooking everyday sabzi, the 22cm or 24cm is a better everyday fit. The 30cm also needs a large burner to use its full base; on a small auxiliary burner the outer rim will heat more slowly.

Yes. The encapsulated base is magnetic and the kadai is rated by Meyer for gas, electric and induction cooktops. Place it centred on the induction coil โ with a 30cm base on a typical 20cm domestic coil, the heat still spreads to the rim because of the aluminium layer, but centring matters more than it does on gas.
On gas, use a burner that sits within the base diameter rather than one that throws flame up the sides; flame licking the walls does nothing for cooking and will discolour the mirror polish over time.
Bare stainless steel is not non-stick, and no amount of marketing changes that. What it is is controllable. Heat the empty kadai for about a minute, add oil, let the oil shimmer, then add food โ this is the classic water-droplet or Leidenfrost test, and it substantially reduces sticking with eggs, paneer, fish and dosa-batter items.
The other half is patience. Protein sticks when it first hits hot steel and then releases on its own once a crust forms. If a paneer cube resists the spatula, give it another thirty seconds rather than forcing it.
And because there is no coating, anything that does stick comes off. Soak, use a scrubber, use steel wool if you must โ metal utensil safe and dishwasher safe means you cannot ruin this surface the way you can ruin non-stick.
Q: Is this a triply kadai? Not in the usual sense โ the three-layer steel-aluminium-steel construction is in the base only, not in the walls. Meyer describes it as a 5mm aluminium sandwich base. A true triply pan is layered all the way up the sides; Meyer's full triply range is called Trivantage, sold separately. For kadai cooking โ where nearly all the heat comes through the base โ a thick encapsulated base performs very similarly for a lot less money. We are flagging the difference because some marketplace titles for this SKU use the word "triply" loosely.
Q: Will food stick to it? Yes, it can โ this is bare steel with no coating, so it behaves like steel. Preheating the pan, then the oil, before adding food substantially reduces sticking, and food releases naturally once it browns. It will never be as slippery as a non-stick pan, and in exchange it will never flake, wear out or need replacing in three years.
Q: Does it work on induction? Yes โ gas, electric and induction are all supported by the encapsulated magnetic base. No adapter plate needed.
Q: Is it dishwasher safe? Yes, Meyer rates it dishwasher safe. Handwashing keeps the mirror polish brighter for longer, since dishwasher salts dull the exterior over many cycles. Either way the pan is unharmed.
Q: Can I use steel ladles and spatulas? Yes. It is metal utensil safe. There is no coating to scratch through. You may see faint grey utensil marks on the interior emery finish over time โ cosmetic only, and a paste of baking soda lifts most of it.
Q: What is the warranty, and does it cover my restaurant? 10 years against defects in material and craftsmanship, under normal household use. Meyer's warranty explicitly excludes commercial use, along with abuse, neglect, overheating and abnormal wear. Q: How do I remove the white marks and rainbow tint that appear after a few weeks? Both are normal on stainless steel and both come off. The chalky white film is hard-water mineral deposit โ a splash of vinegar or lemon juice, warmed briefly and rinsed, clears it. The bluish rainbow tint is a harmless oxide layer from high heat; the same vinegar wipe, or a mild baking-soda paste, restores the shine.
Q: What size burner should I use? A large or medium-large burner. On a small burner the base will still spread heat, but you will not get the full benefit of 30cm of floor and preheating will take longer.
