Tri-Ply construction solves that. A layer of aluminium is bonded between two layers of stainless steel — the inner layer being 304 stainless steel, food-safe and completely non-reactive. The aluminium core spreads heat sideways across the entire base instead of concentrating it under the flame. The steel layers hold that heat steady.

This is a belly-shape cooker, not a straight-sided one.
